Prawn Pasta
Put some salted water on for pasta, Fry an onion, Put frozen peas and sweetcorn in the water when back to the boil Put the pasta in the boiling water. Drop some frozen frozen cooked prawns into the frying pan with the onion, after a couple of minutes add some chopped capsicum or pointed sweet peppers, when cooked add some tomato pasta sauce, when heated drain the pasta, peas and sweetcorn and add to the pan, mix it up and serve. If you have done to much serve on to two plates cover one and put it in the fridge, ready to microwave for tomorrow.
Easy curry.
Get the smallest Pyrex casserole dish out. Measure in the amount of rice that you want I use about 60 to 70 grams. add twice the volume of water and a little salt. add diced a carrot, some diced beans, frozen peas and sweetcorn. ( any veg that you would cook in water would probably be ok). Put the lid on. Put it in the microwave on full power for 2 to 3 minutes to bring it to the boil. then on medium low for the time to cook the rice ( on the packet, mine is 15 minutes)
Slice an onion and fry it, add prawns, or diced chicken or anything you fancy. Give it a stir until the meat is cooked You can now add curry sauce or a teaspoon of curry powder. If curry powder you could use the remainder of the Pasta sauce from the last recipe or a dissolved stock cube thickened with tomato puree, or just Gravy. When cooked for a few minutes, take the rice and veg out of the microwave and serve ( Now don’t just slide the veg rice to the side and tip the curry in to the pyrex, I know it saves washing up but really?

Thanks for posting these. I’ll try both of them. My go to at the moment is stir fry. I buy a big bag of stir fry veg, chicken breasts and make a huge stir fry with any stir fry sauce. I then portion it and put some in the freezer. I’m getting a bit sick of it now! I really miss cooking for 2. I used to enjoy cooking and I could put anything in front of my husband and he would scoff it with relish, even when he was poorly he tried his best
